Bacon is probably the most well known "cut" of pork here in the States. American style bacon is made from the belly of the pig. American bacon is made by curing the belly in a salt and spice mixture and then smoked gently (we adore hickory and/or apple wood)!
Here is our simple formula for perfectly crispy bacon!
Pre-heat oven to 400F
Meanwhile, prepare a lipped baking sheet with aluminum foil.
Lay out bacon as closely together as possible. It shrinks as it bakes so you need not worry too much about overlap!
Bake for 10 minutes, flip bacon, continue baking for 10 more minutes.
Remove from oven, being careful to not let the HOT grease spill out!
Allow to cool 5 minutes before enjoying!
NOTE: While grease is still in liquid state but not so hot go ahead and pour it into a container and refrigerate! If stored properly it will keep for up to 6 months! You can use it to cook up eggs or as a delicious addition to your vinaigrette! Otherwise, toss into the garbage as grease is not good for your plumbing lines!
